Step 1: Immediate Food Safety Actions

Before you troubleshoot anything mechanical, protect your inventory. This is your first priority.

•        Check the internal temperature immediately. Frozen food is safe as long as it remains at 0°F (-18°C) or below. The USDA considers food safe if it still contains ice crystals and has not exceeded 40°F for more than 2 hours.

•        Do not open the freezer door repeatedly  every opening accelerates temperature rise.

•        If temperature is above 20°F and rising, contact a neighboring restaurant or a mobile freezer rental service to accept temporary storage of your most valuable inventory.

Door Seal

In summer, this can overwhelm the refrigeration system entirely.

Condenser Coils

Locate the condenser coils (usually behind a panel on the bottom front or back of the unit, or on top for walk-ins). If they’re packed with dust and debris, the system can’t shed heat. This alone can cause a 10–15°F temperature rise. You can brush them off carefully with a coil brush or vacuum them  but this is a short-term fix if they’ve been neglected long-term.

Power and Electrical

Confirm the unit is fully powered. Walk-in freezers draw significant amperage  a partial power loss (one leg of a three-phase supply) can reduce compressor performance without killing it entirely, showing as a gradual temperature rise over hours. Check your breaker panel carefully.

Evaporator Fan

Open the freezer and listen. You should hear the evaporator fan running. If it’s silent, cold air isn’t being circulated through the cabinet even if the evaporator coil is cold. A failed evaporator fan motor is a relatively quick and affordable repair  but it will cause temperature to rise steadily.

When the Compressor Is the Problem

If quick checks don’t identify the issue, you’re likely dealing with a refrigerant or compressor problem. Signs that point to this:

•        Compressor is running continuously but temperature won’t drop

•        Compressor is cycling on and off rapidly (short cycling)

•        You hear a clicking sound as the compressor attempts to start and fails

•        The compressor is hot to the touch (beyond normal operating warmth)

•        Ice has formed in unusual locations on refrigerant lines

These symptoms require a certified refrigeration technician. Refrigerant issues are not DIY territory  both legally (EPA certification required) and practically (incorrect refrigerant charge causes further damage).

How Long Do You Have Before Inventory Loss?

A fully loaded commercial freezer that loses power or cooling capacity maintains safe temperatures for approximately 24–48 hours if the door remains closed. A half-full freezer holds safe temperatures for roughly 12–24 hours. These are rough guidelines  actual times depend on ambient temperature, insulation quality, and how full the unit is. In a Houston summer kitchen environment, assume the shorter end of these ranges.

Proteins (beef, poultry, seafood) that have thawed completely should not be refrozen without cooking. Partial thawing with ice crystals still present is generally safe to refreeze, though quality may be affected.
